These bars are gluten-free, vegan, naturally sweetened and come together in minutes. They were a hit with 5 out of 5 people in our household and are great to have on hand for a quick snack, breakfast or dessert. Since these are so simple to put together I like to let my kids help with the process.
-2 c rolled oats
-1 c puffed rice cereal
-1/4 tsp salt
-1/2 c peanut or almond butter
-1/2 c honey
-1/2 tsp vanilla extract
-1/2 c mini chocolate chips
In a medium bowl, stir together oats, rice cereal and salt.
Add nut butter and honey to a separate bowl. Microwave at 30 second intervals, stirring after each interval, until the honey and nut butter and melted and stir together well. (I usually do 1 minute total time). Stir in the vanilla.
Stir the wet ingredients into the dry ingredients. You can stir in chocolate at this point, but it will melt, so if you want chunks of chocolate chips in your final product allow the mixture to cool for 5 minutes before stirring in the chocolate chips.
Press the mixture into an 8×8 pan lined with parchment paper. Refrigerate 1 hour. Remove from fridge, cut, and store in the fridge until eating (will keep for 1 week).
