This is a quick, easy, healthful and delicious meal that encompasses the flavors of summer with fresh basil and tomatoes.

-3 chicken breasts, sliced in half into thin cutlets
-salt and pepper for sprinkling
-Italian seasoning and garlic powder for sprinkling
-2 Tbsp olive oil
-1/2 c balsamic vinegar

Bruschetta
-2 Tbsp olive oil
-1/2 tsp salt
-1/4 tsp pepper
-1 clove garlic, minced
-1/4 red onion, diced
-5 roma tomatoes, diced
-6 basil leaves, sliced into ribbons

Heat oil in medium pan, over medium heat. Add chicken and cook 5 minutes per side (or until cooked through), working in batches, until all chicken is cooked.

While chicken cooks, prepare balsamic reduction. Place vinegar in a small pot, over medium heat. Bring to a boil, reduce heat and simmer 10 minutes, until the vinegar has reduced and thickened. Remove from heat and set aside.

While chicken cooks and balsamic simmers, prepare bruschetta. In a small bowl, whisk together olive oil, salt, pepper and garlic. Stir in remaining ingredients bruschetta ingredients. Set aside until chicken is done.

Transfer cooked chicken to a serving platter. Top with Bruschetta, then drizzle with the balsamic reduction and serve.
