This is quick and easy to whip up for a healthy breakfast, lunch or dinner. I love that people can assemble their own bowls and add toppings to taste.
To make this #dinnerdoneby9am I cook the quinoa in the morning, slice the tomatoes, cook the eggs, then refrigerate everything all day and saute the spinach and slice the avocado just before serving and setting up a build your own bar.
-1 cup dry quinoa, cooked according to package directions
-4 soft boiled eggs (I boil mine for 6 minutes)
-1 avocado, sliced
-8 oz grape tomatoes, sliced in half
-crumbled goat cheese
-1 Tbsp olive oil
-6 oz baby spinach
-salt and pepper
Heat oil in a medium pan, over medium heat. Add spinach, saute until wilted, about 5 minutes. Sprinkle with salt and pepper.
Set up a build your own bar with all of the ingredients and let everyone build their own bowl to taste.
