This is a great side dish option, especially for gluten free eaters, that comes together in a matter of minutes. I like to top it with roasted or sauteed veggies (roasted tomatoes or sauteed spinach), or a pile of meat and sauce (my slow cooker maple balsamic pork).
To make this #dinnerdoneby9am I fully prepare the beans in the morning, refrigerate all day, then reheat just prior to serving.
-1 Tbsp olive oil
-1 clove garlic
-2 (14.5 oz) cans cannellini beans, rinsed and drained
-1 c chicken or vegetable broth
-1 tsp dried thyme, oregano or sage
-salt and pepper to taste
Heat oil in medium pan over medium heat. Add garlic, saute 1 minute. Add beans, broth and herb of your choice. Cook 5 minutes. Mash beans with a wooden spoon or potato masher (or puree using an immersion blender). Add a little water if they are too thick. Taste and add salt and pepper, if needed. Serve.
