This is a quick and easy side for any Mexican meal, or an easy vegetarian meal when topped with avocado and/ or cheese. This mixture is so good as is it could be served as a cold (or hot!) black bean dip with chips, or as the base for a 7 layer dip. It is bursting with flavor from the garlic, lime, cilantro and hot sauce and will compliment any Mexican inspire meal
To make these #dinnerdoneby9am I process the bean and seasoning mixture in the food processor, refrigerate all day, then heat just prior to serving.
-2 (15 oz) can black beans, rinsed and drained
-2 cloves garlic
-1/2 tsp salt
-1 tsp cumin
-juice of 1 lime
-4 Tbsp hot sauce (preferably jalapeno or chipotle hot sauce)
-1/2 bunch cilantro, steams removed
-(optional) 1/2 c shredded cheddar cheese
Combine all ingredients in a food processor and mix until well incorporated. Heat in a small pot, over medium heat, until heated through (about 10 minutes). Serve with desired toppings such as cheese, sour cream, avocado and hot sauce.
