This is a healthful breakfast that is easy to throw together, because I usually have all of the ingredients on hand. It comes out smelling wonderful and tasting like a big, soft, healthier version of an oatmeal cookie.
-3 cups quick cooking oats
-2 eggs
-1/2 cup apple sauce
-3/4 cup sugar
-1 cup milk
-1 1/2 teaspoon vanilla
-1 teaspoon salt
-1 teaspoon cinnamon
-1 Tablespoon baking powder
-2 Tablespoons brown sugar
-1 c fresh (or thawed frozen) blueberries
In a large mixing bowl, whisk 2 eggs, applesauce, vanilla, sugar and milk. Once creamy, add oats, salt, cinnamon, and baking powder and stir to combine. Pour batter into greased 9×13 pan. Sprinkle top with brown sugar. Bake at 350 for 30 minutes. Cool for 5 minutes before serving.
