This is everything a good Summer dinner should be; healthy, crisp, fresh and flavorful. To make this salad super quick and easy you can use a bag of cole slaw mix for the cabbage and carrot and use 1/2 a rotisserie chicken for the cooked chicken.

Salad
-2 c cooked and shredded chicken
-1/2 head cabbage, shredded
-2 carrots, shredded
-4 scallions, sliced
-1 mango, diced
-1/2 bunch cilantro, chopped

Ginger Peanut Dressing
-1″ knob ginger, peeled
-1 clove garlic, peeled
-1/4 c sugar or honey
-1/4 c olive oil
-1/4 c rice wine vinegar
-1 Tbsp peanut butter
-1 Tbsp soy sauce
-1 tsp Sriracha sauce
-1/2 tsp salt

To make the dressing, combine all dressing ingredients in a blender or food processor and process for 1-2 minutes, until smooth.

In a large bowl, toss dressing with salad ingredients and serve.
