This bowl will whisk your taste buds away to a beach in Jamaica. Bowl meals have become all of the rage lately. They are a fun way to mix up a variety of flavors and textures. Guests also love to be able to pick their own ingredients and assemble their own bowl.

To make this #dinnerdoneby9am I place the chicken in the slow cooker in the morning, prep the bowl ingredients, then refrigerate the prepped items all day and pull everything out when it is time to eat.

Slow Cooker Jerk Chicken
-2 lbs chicken breasts
-6 cloves garlic, mined
-2 Tbsp olive oil
-2 Tbsp liquid smoke
-4 Tbsp soy sauce
-zest and juice of 1 orange
-zest and juice of 1 lime
-1 Tbsp allspice
-1 Tbsp thyme
-2 Tbsp sugar or honey
-1 1/2 tsp sage
-3/4 tsp nutmeg
-3/4 tsp cinnamon
-1/4 tsp cayenne
-1 tsp salt
-1/2 tsp pepper
-(optional) 2 Tbsp cornstarch mixed with 2 Tbsp water

Bowl Ingredients
-rice
-cauliflower rice
-chopped mango
-chopped pineapple
pickled red onions
-diced avocado
-chopped cilantro
-sliced green onions
-lime wedges
-assorted hot sauce

In a greased slow cooker, stir together onion through pepper. Add chicken breasts and use a spoon to coat with the sauce. Cook on low for 5-6 hours, or until chicken shreds easily with 2 forks. Remove chicken to a plate, and shred using 2 forks. (Optional) Stir cornstarch into slow cooker to thicken juices, cover, and cook 5 minutes on high. Stir shredded chicken into thickened sauce and serve with desired bowl ingredients.
