This is a quintessential salad dressing that is good to have in your repertoire. You probably already have all of the ingredients on hand, and it takes less than 5 minutes to whip up, so there’s no reason not to make this dressing. It keeps for a week in the fridge so I like to double or triple the recipe and have enough on hand for the whole week. I like to make my dressing in a food processor because I find that it emulsifies so well that it won’t separate when allowed to sit, but you can easily make this in a blender, shake it in a jar, or whisk everything together in a bowl.

-1/2 c olive oil
-1/4 c balsamic vinegar
-1 clove garlic, minced
-1 Tbsp sugar or honey
-1 Tbsp Dijon mustard
-1/2 tsp salt
-1/4 tsp black pepper
-1/2 tsp Italian Seasoning or dried basil

Combine all ingredients in a food processor, blender, jar, or bowl and mix until everything is well incorporated. Serve immediately, or refrigerate until serving.
