I’ve been drooling over this Pork Dragon Noodle recipe on Budget Bytes for MONTHSSSSSSSSS and finally got around to making it. We loved it, and I love that it is super quick, easy and uses few ingredients. I changed the recipe a little, as reflected below, to suit our tastes. I served it with broccoli that was tossed with 1/2 tsp salt, 2 Tbsp sesame oil and 1 Tbsp chili garlic sauce, then roasted at 425 until browned.

To make this #dinnerdoneby9am I would cook the pork, add the sauce, chop the peanuts, and slice the green onions. Then I would refrigerate all day and reheat while the noodles boil, before tossing it all together at dinner time.

-2 Tbsp sesame oil
-1/4 cup chili garlic sauce
-1/4 cup soy sauce
-1/4 cup brown sugar
-1 lb. ground pork
-4 oz. ramen noodles
-1/8 cup unsalted peanuts, chopped
-4 green onions, sliced

Combine the chili garlic sauce, soy sauce, and brown sugar in a bowl and set aside.

Heat sesame oil in a stir fry pan over medium heat, add pork and cook until it is fully browned. Once browned, drain off extra fat and add the prepared dragon sauce and chopped peanuts. Allow the pork and peanuts to simmer in the sauce for another 5 minutes.

While the pork is browning, begin boiling water for the noodles. Once boiling, add the noodles and cook according to the package directions. Drain the noodles and add them to the pan, tossing until everything is combined and coated in sauce. Top with sliced green onions and serve.
