The weather here in New Orleans has not dropped below the 80’s yet so I am making this salad and pretending that we have some semblance of Fall here. The combination of apples, nuts, and kale all tossed in a maple flavored vinaigrette take me away to thoughts of colored leaves, cozy sweaters, and brisk air.

SALAD
-8 oz kale, torn into bite sized pieces
-1/2 cup dried cherries
-1/2 cup walnuts or pecans, chopped
-1/2 cup shaved parmesan cheese
-1 red apple, thinly sliced

MAPLE BALSAMIC VINAIGRETTE
-2 Tbsp maple syrup
-1 Tbsp Dijon
-1/4 cup balsamic vinegar
-1/2 cup olive oil
-1/2 tsp salt
-1/4 tsp pepper

For the vinaigrette:
Whisk, shake, or use a food processor to combine the dressing ingredients.

For the salad:
Place kale in a salad bowl, add vinaigrette to your taste, then toss well. Let sit for 15-30 minutes, then toss again. Layer cheese, cherries, nuts and apple slices on top of kale and serve.
