This was inspired by a Martha Stewart recipe I found but I changed the ingredients and the process to suit our tastes. This is a hearty, balanced, comforting, one-pot meal that takes about 30 minutes to make.

-1 (29 oz) can diced tomatoes (with their juices)
-1 Tbsp olive oil
-1 lb Italian Turkey Sausage
-1 cup Arborio rice
-1/2 cup dry white wine
-8 oz kale, stems removed and torn into bite sized pieces
-1/2 cup grated Parmesan cheese
-1 Tbsp butter
-1 tsp salt
-1/2 tsp pepper
-1/4 tsp red pepper flakes

Combine tomatoes (with their juice) and 3 cups water in a small pot, over medium heat. Bring just to a simmer, reduce heat and keep warm over low heat.

Heat olive oil in a medium pot, over medium heat. Add sausage and cook, breaking sausage up with a spoon, until sausage is crumbled and browned (about 5 minutes).
Add rice; cook, stirring until well coated, 1 to 2 minutes. Add wine; cook, stirring until absorbed, about 1 minute.

Add 2 cups of the hot tomato mixture to the rice. Simmer over medium heat, stirring occasionally, until absorbed, 4 to 5 minutes. Continue adding tomato mixture, 1 cup at a time, waiting for it to be absorbed before adding the next. Once the rice is tender and the liquid is mostly absorbed, remove pot from heat and stir in parmesan, butter, salt, pepper and red pepper flakes. Stir in kale and serve.
