This is my favorite way to eat zucchini.

To make this #dinnerdoneby9am I cut the zucchini in the morning and combine the oil with the spices, cover and set it all aside. Then I drizzle the seasoned oil and parmesan over the zucchini just prior to baking.

-2 Tbsp olive oil
-1 tsp salt
-1/2 tsp pepper
-1/4 tsp garlic powder
-1/2 tsp thyme or oregano
-4 zucchini, each one cut into 8 spears
-1/4 cup shredded parmesan cheese

Place zucchini on a greased baking sheet (I like to line mine with parchment or foil for easy clean up). In a small bowl, whisk together olive oil, salt, pepper, garlic powder and thyme or oregano. Pour oil mixture over zucchini and stir to coat. Sprinkle parmesan over zucchini. Bake at 400 for 10-15 minutes, until desired tenderness is reached.
