These are one of my top 5 favorite things I’ve eaten. EVER. I really didn’t expect to like them, because I didn’t think that I like dates, but I am a forever convert now. The combination of chewy sweet dates, with creamy goat cheese, and crisp, salty bacon is intoxicating. I bet you can’t eat only one. You will be the hit of every party you bring them to. I have never seen these served at a party in which every single one wasn’t eaten. The recipe is from Shauna Niequist’s book Bread and Wine.

To make these #dinnerdoneby9am I prepare the dates in the morning, refrigerate all day, then broil just before serving.

-1 package pitted dates
-2 oz goat cheese
-8 slices bacon, cut into thirds
-toothpicks

Use a knife to spread 1/2 tsp of goat cheese inside each date. Wrap each date in bacon and secure with a toothpick. Repeat until all dates are gone. Broil for 3-5 minutes on each side, watching carefully so they don’t burn. Cool for 5 minutes and serve.
