This is one of my favorite dinners and by using lean beef this is so much better for you than the takeout version.

To make this #dinnerdoneby9am I make the tzatziki and mix the meat until it is pressed in the pan, then refrigerate all day and bake the meat and set out the toppings just prior to serving.

Tzatziki Sace
-1 c plain greek yogurt
-1/2 cucumber, peeled and seeded
-1 clove garlic, minced
-1 tsp dried dill
-1 tsp salt
-1 tsp red wine vinegar

Gyros
-1 onion
-4 cloves garlic
-2 lbs lean ground beef
-1 Tbsp dried oregano
-1/2 Tbsp dried marjoram
-1/2 Tbsp dried rosemary
-1 tsp salt
-1/2 tsp pepper
-1/4 tsp red pepper flakes
-pita bread for rolling
-desired toppings: tzatziki, sliced red onion, diced tomatoes, shredded lettuce

Place cucumber in food processor and pulse until it is finely minced. Move cucumber to a kitchen towel and rinse/ wipe out food processor. Squeeze excess moisture out of cucumber. In a small bowl, whisk together yogurt, cucumber, garlic, dill, salt and vinegar. Refrigerate until serving.

Place onion and garlic in a food processor and pulse until finely minced. Add beef, oregano, marjoram, rosemary, salt, pepper and red pepper flakes. Process for 1 minute. Spread meat mixture into a greased loaf pan and bake at 350 for 60-70 minutes, until internal temperature reaches 170. Remove from oven, drain off fat and let sit an additional 10 minutes.

Thinly slice meat and serve with pita and toppings of your choice.
