This combination of pasta, eggs, cheese and bacon is simple, elegant, flavorful and crowd pleasing. I’ve added peas and/ or mushrooms when I wanted more nutrition, used regular or whole wheat pasta, and used both pork bacon and turkey bacon, and yet this dish always comes out wonderfully.

-1 box spaghetti
-1 TbspĀ  olive oil
-1 package bacon, cut into 1″ pieces
-4 eggs
-lots of fresh ground black pepper
-1/4 tsp red pepper flakes
-1/4 tsp salt
-1/2 c parmesan cheese
-1/2 c reserved pasta water

Heat oil in medium pan and cook bacon, stirring intermittently, until crisp.

While bacon is cooking, bring large pot of salted water to a boil. Cook pasta according to package directions, reserving 1/2 c pasta water.

While pasta is cooking whisk together eggs, pepper, red pepper flakes, salt and parmesan cheese in a bowl.

Once pasta is al dente, drain, reserving 1/2 c cooking water. Immediately place pasta in a serving bowl and toss with egg mixture. Stir in bacon and serve.
