These are individual breakfasts that you can easily bake for one, or several people as needed.

-eggs
-tomatoes, chopped
-shredded mozzarella cheese
-salt and pepper
-fresh basil, sliced

In a greased ramekin layer tomatoes and cheese. Crack 2 eggs into each dish. Sprinkle with salt and pepper. Bake at 350 for 18-20 minutes. Cool 5 minutes, sprinkle with fresh basil and serve.
