This meat is super versatile. We use it to make burrito bowls, chicken tacos, taco salads, enchilada filling, nachos, quesadillas etc.

To make this #dinnerdoneby9am I throw everything in the slow cooker in the morning and shred the chicken prior to serving, or fully prepare in the pressure cooker, refrigerate all day, then reheat in the pressure cooker at dinner time.

-2 lbs chicken breast, trimmed of fat
-1 cup salsa or diced tomatoes with chiles
-4 cloves garlic, minced
-1 Tbsp chili powder
-1 tsp cumin
-1 tsp salt
-1/2 tsp pepper
-1/4 tsp cayenne
-(optional) fresh cilantro and/ or lime zest

Slow Cooker
Combine all ingredients in slow cooker. Cook on low for 6 hours, until chicken shreds easily with a fork.

Pressure Cooker
Combine all ingredients in pressure cooker. Cook on manual, at high pressure, for 30 minutes. Naturally release pressure, shred chicken with a 2 forks and serve.
