This meat is super versatile. We use it to make burrito bowls, chicken tacos, taco salads, enchilada filling, nachos, quesadillas etc.

To make this #dinnerdoneby9am I throw everything in the slow cooker in the morning and shred the chicken prior to serving.  

-2 lbs chicken breast, trimmed of fat
-1 cup salsa, rotel or diced tomatoes
-4 cloves garlic, minced
-1 Tbsp chili powder
-1 tsp cumin
-1 tsp salt
-1/2 tsp pepper
-1/4 tsp cayenne
-(optional) fresh cilantro and/ or lime zest

Combine all ingredients in slow cooker. Cook on low for 4-6 hours, until chicken shreds easily with a fork.
